Pump Street is a small family-run bakery on Suffolk's heritage coast making small-batch, handmade artisan chocolate from single-origin beans imported directly to them from family farms and cooperatives around the world.
Chocolate origin: Farm - Bachelor’s Hall Estate, Saint Thomas, Jamaica. Farmer - Desmond Jadusingh. Bean type - Trinitario. Accreditation - Heirloom Cacao Preservation.
Terroir. The land here is fertile, potent ground with natural springs and four small rivers running through it, below the Blue Mountains of the St Thomas Parish on the southeastern end of Jamaica. Once one of the top producing coconut farms in Jamaica, it has also grown bananas and sugar cane but has been focusing on cocoa farming since Desmond bought the land in 2002.
Bean Character. Rich, dark and chocolatey with a very fine flavour, heaps of dried fruit jamminess and the scent of dark rum.
